Guacamole & Crudites

Ingredients:

3 avocados
1 small onion
2 green chilies
juice and rind of a lime
1 oz/25g coriander leaves

8 sticks celery
4 carrots

Directions: In a food processor, blend together the avocados, onion, chilies, lime rind and juice and coriander leaves. Pour into a bowl. Slice the veg into thin sticks and dip these into the guacamole. Serves 2 people.

Raw Chick Pea Hummus & Crudites

Ingredients:

8oz/200g chick peas, soaked for 24 hours (retain 5 fl. oz of the liquid)
4 tbsp tahini
5 fl.oz/150ml olive oil
4 gloves garlic
juice of a lemon
1oz/25g parsley, finely chopped

6 sticks celery
3 carrots
1 red pepper

Directions: In a food processor combine the soaked chick peas, tahini, half of the olive oil, half of the retained chick pea liquid, garlic and lemon juice. Taste. Add more olive oil/chick pea liquid as required. Process until smooth. Garnish with the chopped parsley. Wash and chop the vegetables into sticks and use these to dip into the hummus. Suitable replacements include broccoli, cauliflower, etc. Serves 2 people.

Vegetable stir fry

Ingredients:

Small broccoli
1 red pepper
5oz/120g mangetout
1 carrot
100g/4oz beansprouts (preferably home made)
Bunch spring onions
1g/small handful seaweed, such as Arame
1 tbsp sesame seeds
1 tbsp vegetable oil
1 tsp sesame oil
2 tbsp tamari
1 tbsp honey
3 tbsp veg stock

Directions: Soak the seaweed for 10 minutes. Peel and chop the carrot into thin slices, chop the broccoli into small pieces. Trim the mangetout and thinly slice the pepper. Slice the spring onions into inch long lengths. Heat the vegetable oil in a wok or frying pan. Add the carrots and broccoli and stir fry for 2-3 minutes. Add the mangetout and pepper and cook for 2 minutes. Add the spring onion and cook for a further minute. Mix together the sesame oil, tamari, honey and stock and pour into the pan. If necessary cut the seaweed into smaller pieces, and add to the pan together with the beansprouts. Cover and cook for 2 minutes. Serve and sprinkle the sesame seeds on top. Serves 2 people.
